“You must be an active participant in the development of your new self. You might peel off some ugly layers but you will discover someone stronger and more resilient than you ever thought imaginable. So if you are depressed, overweight, unhappy or just STUCK I encourage you to start… don’t think about the weight number or the end of the ‘health streak’ think of it as reinventing yourself.”

Asian Marinated Chicken Breast

TIP: Omit the thyme (yuck!) and add 3 tbsp mirin (cooking wine), 1 inch piece of ground ginger, salt and peppah, of course!

Curry Chicken Marinated Chicken Breast

TIP: I like a more deep curry flavour, if you do too add 1 tsp cinnamon, 1 tsp paprika, 1tsp ginger powder.

Honey Dijon Marinated Chicken Breast

TIP: I put 2 tbsp of honey and 2 tbsp of mirin (asian cooking wine) you could use any white wine too and a sprinkle of red chilli pepper flakes.

Homemade Hamburger Patty

TIP: You can easily omit the feta and make just a regular patty!

Slow Cooker Creamy Coconut Chicken Curry

Chicken and Onion Pizza

  • I like to use canned diced tomatoes as my base instead of sugary tomato sauce.
  • add whatever toppings you like!
  • I like to cook my chicken in bite size pieces with garlic, onion and basil.

TIP: If you make the dough a few hours in advance and store it in a large bowl in the fridge the dough is chewier and tastier!

Oatmeal Chicken Strips

Best Quinoa Cooking Method EVER!

Tip: Add marinated chicken and three bean salad with some cumin and boiled egg thrown in. SO good.

Sweet Potato

I live in Japan so this is for Japanese sweet potato, but I think any yam/sweet potato will reap the same results.

Brown Rice

Tip: Make sure your pot is big enough. I had so many failed attempts while using a small pot. My advice if you’re using a small pot use 1 cup of uncooked rice MAX.
